Ingredients
Part A
1 ½ cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
Part B
3 bananas, mashed
¾ cup white sugar
1 egg, lightly beaten
1/3 cup vegetable oil
Part C
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter, chilled.
Preparation
1. Preheat over to 375 °F
2. In a large bowl, mix ingredients
from Part A.
In another bowl, beat ingredients from Pate B.
In a Small Bowl, mix ingredients from Part C, until it resembles course
cornmeal.
3. Take the bowl with Part B and
stir in Part A until moistened. Spoon batter into prepared muffin cups. Sprinkle
small bowl Part C over the muffins.
4. Bake in preheated oven for 18 to
20 minutes (for aluminum pan), or 18 to 20 minutes (non-stick pan), until a
toothpick inserted into the center of a muffin, comes out clean without any
uncooked batter.
